The first game is similar to Spyro if you played that, you have a main hub world with different areas that are smaller linear levels. Both the HUB worlds and sub worlds have bottles in them and if you collect them all then you can unlock a vault that gives you a new power (not necessary to win).

The second game is different. Each level consists of one open world (with wall limitations of course) where you are pulling off small jobs that build up to a big heist. The bottle collecting is not essential but the moves ARE fun. The new concept in the game is that you can LOOT coins and at random, objects that you take back to your temporary HQ to sell for coins that you can use to BUY new moves. There are also rare items in the main world that you can steal and take back to your HQ BUT if you get hit then the item breaks and some of those items have a time limit on them. OH and you can play as all 3 of the characters instead of just Sly (and Murray was playable only for racing mini games which BTW can go to hell.)

I am not too far into the 3rd game but from what I can tell is that they threw away with the botle collecting and now all THREE friends are able to loot enemies (I think Bently needs to buy his loot ability but it is cheap)
Again in the third game you have one big open world and you have to pull off small jobs that lead up to a big heist or prevent the main boss of the area from doing something evil.

This is probably not the best way to explain the game(s) so people can easily fix what I put down or whatever but that is how the game(s) are for me.
