I've been waiting for somebody to give out some TF2 did you knows, there's actually a TON of interesting trivia! Here's some that I've learned over the year:
Did you know that the Spy's Disguise and Cloak ability came from a glitch and server plug-in respectively? The glitch was originally in Quake where a player would be disguised as an enemy, and the mod made it so that disguised spies would become invisible. This became the central game mechanic for playing as a Spy in TF2 where disguises and cloaking could get you behind enemy lines to take out the biggest threats to your team.

If a scout is gibbed, there is a 1/100 chance of a dove flying out of the gibs, this is a reference to the end of Meet the Medic where Archimedes the Dove is stuck in his chest.
Did you know that originally grenades were considered for TF2 (originally used in Team Fortress Classic) but promptly removed from the game for game balance? They do make cameo appearances however, the Frag Grenades appear on the Soldier's sash and in the Mann Vs. Machine upgrade station, while 3 Napalm Grenades are on the Pyro's sash. The only way to use a grenade is with the Soldier's Equalizer/Escape Plan taunt kill which kills not only yourself, but any enemies close to you. The MIRV as stated above, only appears in the trailer for the game as a bundle of dynamite sticks that would split into 4. There is also a Bear Trap which was supposed to play like the Caltrop, it now has a cameo in the Mann vs. Machine upgrade store.

Speaking of Team Fortress Classic, did you know that there are a few more cameo appearances from that game and some old concepts included in TF2? They range from small appearances within the game, to cosmetics made by the developers AND fans of the game! If you look carefully at an upgraded dispenser, you'll see a clip of industrial nails down at the bottom of it, this was originally part of the Nail Gun for the scout which was scrapped for the default Scattergun. The Beartrap, napalm, and frag grenades make an appearance as well but again are unable to be used aside from the Soldier's Kamikaze taunt. The Heavy's hat (The Heavy Duty Rag) looks exactly like the same bandana the TF classic heavy wears upon his head, the Pyro's Hazmat Headcase was designed around an old concept art for his/her design, and in the TF2 Engineer update, there was a picture included that showed a young Dell Conagher (The Engineer) trying on the trademark goggles while being patted by his father: The TFC Engineer.

A correction for the Scout and taking a Heavy's Sandvich. This is actually a reference to "Meet the Scout" where in it he fights the heavy on a control point and in the end, steals his Sandvich while also capping the point.
Did you know that long before "Meet the Pyro", that the Balloonicorn made a cameo appearance in the comic "A Smismass Story" on the very first page? It's on the bottom right hand side of the Christmas tree in the background, just below the man being punched by Santa.

Here's something that may surprise any weapon enthusiast who plays this game, in the announcement video that TF2 became F2P, they actually showed 3 unreleased weapons in it, including the Beggar's Bazooka?! The other two weapons are a Pyro Melee weapon that looks like a scythe, and a new Medi gun. As of this post, those weapons have not been released.

Here's some interesting facts that probably a lot of you know, but it's still interesting. Long before the Mann Vs. Machine update, there have been subtle hints and clues regarding this update. A Halloween update back in 2009 had a Will and Testament from Zepheniah Mann with some details missing. From the Engineer update, there was a picture of the robot scout in the style of Leonardo Da-Vinci's Vitruvian Man, while in the update video, the Demoman bot and Heavy bot's heads can be seen amongst the piles of scrap. Environmental messages of TOBOR and MVM appeared in certain maps. The Barely Melted Capacitor used for the "Meet the Pyro" update not only included the blog post date, but also in numerical code just below it that spelled out "GRAY". Shortly after there was a hidden link on the blog which lead to the same Will and Testament from the Halloween update, but all the blanks were filled in revealing that there was a third Mann son named "Gray" who tried to blackmail his father. Eventually through an ARG involving the Capacitor item, another comic was revealed in which the third brother appears, kills Redmond and Blutarch and sets his sights on Mann Co. signaling the impending update and the rise of the machines just a day after the comic's reveal.

That's all I can offer, there's quite a lot to this game if people take the time to look.
