Throughout Old Snake's character development, Hideo Kojima and his crew went through a lot of Hollywood movies to find out which moustache would work best for Old Snake. They settled for Lee Van Cleef from The Good, the Bad, and the Ugly. They also played around with the idea that Snake's beard would grow in real time since Metal Gear Solid 2.

Hideo Kojima: "Of course, the team researched many different beards and mustaches and we eventually decided on this Lee Van Cleef inspired look."

I remember reading that in the same magazine when it came out, I just can't find the magazine, but it did say that they went through a lot of actors for a moustache inspiration.
