Favorite Cheese?

Awww man, I love cheese. Having grown up in the land of cheese, it's a central part of my life (don't laugh ) and I have so many I would call my favourite.

Now, on non-french cheeses - I like quite a few English cheeses (cheddar, gloucester, etc.) and many ones from various parts of Europe (Italy, Holland, etc.)
I have an issue with cheese in North America. I go to the shop to buy "cheddar", and it tastes of tough mozarella. I go to buy "mozarella", and it tastes of chewy milkstuff.
Don't get me wrong, these cheeses are tasty, but any of that processed business is cheese-blasphemy in my opinion.

If you like cheese and you go to Europe, stop by a fromagerie and have a look at what we have to offer. Especially in my mountains, we have tens of cheeses for every taste; from strong blue cheeses, to full flavoured St Marcellin, to the harder Tomme de Savoie
