For PS2: Ty the Tasmanian Tiger series, Destroy All Humans 1 and 2, Jak series, Sly Cooper series, Radiata Story( A little obscure, but a great RPG), and Ratchet and Clank series.

For PS1: Crash Bandicoot, Spyro, and Tomba.

For GBA: Megaman BattleNetwork Series and Pokemon

I tried to not go with really popular series and I wasn't to sure what to do for N64 and Gamecube other than Banjo Kazooie, Mario, and Zelda. I was considering saying Extreme G or Snowboard kids. But other than F Zero their isn't many classic racing style games.
