In The Legend of Zelda Ocarina of time even though Zelda and Sheik are the same person they have different colored eyes. Sheik has Pinkish red eyes and Zelda has blue eyes.

Also it's because Zelda was changed from Female to Male. Her body (including eyes) would obviously have changed

Ocarina of Time was also supposed to be a First Person Shooter as well.

Probably not a useful fact, but the first 3 levels have a theme of entering through a mouth. Great Deku Tree, giant Dodongo skull, and Lord Jabu Jabu.

Sort of off topic, but during Majora's Mask's development, there were originally plans for an "Adult Link" mask, which later became the Fierce Deity mask.
