I'm going for the obvious one of Valve, there hasn't been a single game they have done which I haven't loved. Only thing I don't like about them is they constantly rape my wallet. Id are definitely up there as well also Epic that was mainly for the Unreal games though, never got into Gears of War tbh.

Nintendo's network of developers covers most of my favourites. Enix, RockStar, maybe Bungie?

Well, MY favorite developer is Level 5! It made the Dark Cloud series, plus an old game I like called "Okage - Shadow King". I always wonder what their next game they're gonna make ^_^
But, I also like the Nippon Ichi for their awesomly cool series, Disgaea. Nothing is better then to reincarnate your player a thousand times to beat any noob, any day ^_^

I'm gonna have to go with Valve on this one, and not just because of the games. It's just that they GET IT, and it shows. I mean, sure Steam has a few problems, but whatever, it's still an amazing service. Also, with them releasing the Source Filmmaker absolutely free, it's just another notch on my belt of why I love Valve.

I really wish I had a PS3 to play some of the Disgaea games. I devoted way too much time to the first one, and I still couldn't Baal. Also, Level 5 is awesome.

I love Capcom, as well as Konami for Castlevania, Metal Gear and Silent Hill. I'm a sucker for Nintendo games, I just wish they would release some more good ones lately (though I'm quite stoked for Paper Mario: Sticker Star).
edit: Oh, I should throw in I really enjoy Atlus (mostly for Shin Megami Tensei) and Enix.

Honestly, even with all the complaining going on online and whatnot, I'd have to say Capcom. Most of my favorite games and series have been made by the company.
Close second would be either Square or Nippon Ichi.

Mine would have to be Classic Rare, Sucker Punch, Media Molecule, Naughty Dog, Sega, Ubisoft.
